2 T. oil
1 c. long grain white rice, uncooked
1 med. onion, chopped
1/2 med. green pepper, chopped
2 c. chicken broth
1 clove garlic, chopped
10 oz. diced tomato
2 tsp. chili powder
1 tsp. salt
1 T. hot sauce

Directions:
Directions:
In a high walled skillet, heat oil over medium heat. Saute rice, onion, garlic, and green pepper until rice is browned and onions are tender. Stir in broth and tomatoes. Season with chili powder and salt. Stir in hot sauce. Cover and simmer for 30 minutes or until rice is cooked and liquid is absorbed.
