2 egg
1 small onion, chopped
1/2 tsp. salt
2 Tbsp. catsup
1 Tbsp. mustard
1 pkg. crackers, crushed

Directions:
Directions:
Mix all ingredients together well. Place in a glass baking dish sprayed with Pam. Put meat mixture in dish and shape into a loaf. Pour tomato juice over meat loaf and bring the liquid halfway up on loaf. Cover with plastic wrap, pressing around all sides of dish to make secure. Put a small slit in the top of plastic wrap to let steam out. Cook for about 20-25 minutes. While cooking, check off and on to make sure there is enough liquid in the dish. If the liquid cooks out, add a little more to it. Replace plastic wrap as directed above.
Slice and serve.
