6 large fresh tomatoes
1 large cucumber
1 large green bell pepper or red
3 tbs. red wine vinegar
2 tbs. Olive oil
Juice of a 1/2 lemon
2-3 tsp. chopped fresh parsley
2 tbsp. fresh basil
salt and pepper
Tabasco sauce to taste
Herb croutons optional

Directions:
Directions:
Peel the tomatoes by submerging them in boiling water for 13 seconds. Remove to a colinder and rinse under cold water. The skins should peel right off.
Core the tomatoes and gently squeeze out the seeds. Chop half of them coarsley and puree the other half in a food processor. Combine the puree and chopped tomatoes in a large bowl. Blend in the remaining ingredients except the croutons. Cover and chill for several hours. Serve chilled ,garnish with croutons.
