1 c unbleached flour
1 c whole wheat pastry flour
1 c brown sugar, frimly packed
1/8 t salt
1 t cinnamon
1 t baking soda
2 c very ripe mashed peaches
1 large egg, slightly beaten
2 T melted butter
1 c chopped pecans

Directions:
Directions:
In a medium bowl, mix togeter flours, brown sugar, salt cinnamon and soda. Put mashed peaches in a large bowl and add egg and melted butter. Stir in flour mixture and nuts. Pour into oiled 9 by 5 inch loaf pan. Bake at 350 degrees for 45 -55 minutes until a toothpick inserted in middle of top comes out clean. Cool in pan 15 minutes; remove and cool on wire rack. Bread will cut more easily the next day.
