1 1/4 c. all-purpose flour (or white rice flour)
3/4 c. yellow cornmeal
1/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
1/4 c. vegetable oil
2 egg whites (or 1 egg beaten)

Directions:
Directions:
Preheat oven to 400.

Grease a 8 or 9 square inch pan. Combine dry ingredients. Stir in milk, oil, and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 20-25 minutes or until light golden brown and wooden toothpick inserted in center comes out clean. Serve warm.
