1/2 lb mushrooms
4 green onions
or
1/2 lb breakfast sausage
or
1/2 lb cooked baconed crumbled

1/2 c. flour
1/2 t. salt
1 t. baking powder
1/2 c. butter - melted
10 eggs
4 c. (16 oz.) monterey jack cheese
2 c. ricotta or cottage cheese

Directions:
Directions:
Preheat oven to 350. Spray muffin tins with nonstick spray.
Choose either mushrooms and green onions sauted togther or sausage or bacon

Mix dry ingredients together. Combine in rest of ingredients.

Fill muffin tins.
Bake 35-40 minutes.
Run knife around edges and remove.
