1 can 14 - 3/4oz. undrained salmon
1 - 1/2 cups mashed potato flakes
1/3 cup water
1/4 cup reduced fat mayo
1 T. minced onion
1/3 cup packaged seasoned dry bread crumbs
3 T. vegetable oil

Directions:
Directions:
Mash salmon with liquid, bones and skin in medium bowl. Stirl in potato flakes, water, mayo and onion until blended.

Divide into 8 portions and form patties. Coat with bread crumbs.

Heat 1 Tbsp. oil in large skillet until hot but not smoking. Fry patties in 2 batches for 3 minutes per side until golden brown, adding more oil as needed.

Serve with creamy horseradish sauce or tarter sauce.
