1 c. oil
1 c. zucchini, shredded
1 c. sugar
1 egg
2 1/3 c. flour
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt (optional)

Frosting:
1/2 c. brown sugar
3 Tbsp. oleo/butter
4 Tbsp. milk
2 c. powdered sugar
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350.

Mix all ingrdients well. Drop by spoonful on ungreased cookie sheet. Bake for 10-12 minutes or until golden brown.

Frosting:

Put brown sugar, oleo/butter, milk in a pan and bring to a boil. Remove from heat. Stir in powdered sugar and vanilla.

Frost cooled cookies.
