Whisk together in a large bowl:
1 cup all-purpose flour
1/2 cup whole wheat flour
3 Tbsp sugar (granulated or brown sugar)
1 1/2 tsp baking powder
1/2 tsp salt

Whisk together in another bowl:
1 1/2 cups milk
3 Tbsp unsalted butter, melted
2 large eggs
1/2 tsp vanilla

Pour the wet ingredients over the dry ingredients and gently whisk them
together, mixing just until combined. Feel free to fold in nuts,
chocolate chips, etc. Spoon 1/2 cup batter onto the griddle for each
pancake. Cook until the top of each pancake is speckled with bubbles
some bubbles have popped open, then turn and cook until the underside
lightly browned. Serve immediately or keep warm in a 200 degree oven
you finish cooking the rest.
