2 c flour
1 c sugar
3 tsp baking powder
1/2 tsp salt
2 eggs
1 c half and half cream
1/2 c vegetable oil
1 tsp lemon extract
1 c fresh or frozen unsweetened raspberries

Directions:
Directions:
In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, combine the eggs, cream, oil and extract. Stir into dry ingredients just until moistened. Fold in raspberries. Fill greased jumbo muffin cups 2/3 full. Bake at 400 for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm.

Do not thaw if using frozen berries.
If you use regular size muffin cups bake for 18-20 minutes.
