1 6oz can frozen orange juice
4 t. unflavored gelatin
3/4 C granulated sugar
Pinch salt
1/4 C lemon juice
1 C light cream
1 t. grated lemon rind or lemon extract

Directions:
Directions:
Reconstitute orange juice with water by label directions. Soak gelatin in 1/2 cup of juice in small bowl for 5 minutes. Set bowl over boiling water and stir until gelatin is dissolved.
Combine rest of orange juice with salt, sugar, lemon juice, lemon rind and cream. Stir in gelatin. Turn mixture into freezing tray with control set at coldest setting and freeze until half frozen. Turn into bowl and beat well with electric beater. Serve at once, if desired, or return to freezing tray and freeze until firm.
