1 lb. ground beef
1 egg, slightly beaten
1/4 c. bread crumbs
2 medium carrots, grated
2 medium potatoes, grated
Salt & Pepper to taste

1 c. shredded Cheddar cheese

Directions:
Directions:
Mix all ingredients very well. Form into balls about the size of a walnut and brown in 2 Tbsp. oil in skillet.

Take from skillet and place in 9" x 13" baking dish.
Prepare 2 cups white sauce as follows:

Beat 2 Tbsp. cornstarch and 2 c. milk until smooth. Add 4 Tbsp. butter, 1/2 tsp. salt and 1/4 tsp. pepper. Stirring constantly, bring to boil over medium heat, boil 1 minute.

Mix sauce with 1 can mushroom soup, undiluted.

Pour sauce over meat balls in baking dish. Bake at 325 for 30 min. Sprinkle with grated cheese, cover and bake an additional 30 min.
