3 lbs cooked roasted chicken, deboned and chunked
2 c. sliced carrots
2 c. sliced celery
2 1/2 c. wide egg noodles, uncooked
1 tsp. poultry seasoning
1 T. dried parsley flakes
1/3 c. parmesan cheese, grated
3/4 c. heavy cream
1/3 c. cooking sherry (optional)
salt to taste
black pepper to taste
3 qts. chicken stock

Directions:
Directions:
In a large stockpot bring 3 quarts chicken stock to a boil and add carrots. Cook soup for 3 minutes. Slice celery and add to soup along with all remaining spices and cook for 5-10 minutes. Add noodles and cooking according to package directions. When noodles are done, add chicken, cheese, cream and sherry. Cook for another 5 minutes to warm through. Adjust seasoning if needed by adding salt and pepper.
