2 oz. fried bacon
8 whole mushrooms
1 T. butter
1 T. chopped onion
3/4 c. cheddar cheese, shredded

Directions:
Directions:
Preheat oven to 400 . Remove mushroom stems and set aside caps. Chop the stems up and place them in a large saucepan over medium heat with the butter and onions. Slowly cook the chopped stems and onions until the onion is soft. Remove from heat. In a medium bowl, stir together the mushroom stem mixture, bacon and 1/2 cup of the cheese. Mix well and scoop the mix into the mushroom caps. Bake in the preheated oven 15 minutes or until the cheese is melted. Remove the mushrooms from the oven and sprinkle with the remaining cheese.
