Left-over mashed potatoes,
Potatoe starch (found in the Jewish section of most grocery stores) and one T. at a time until mixture is slightly thick,
oil or cooking spray for frying

Directions:
Directions:
Mix together mash potatoes and enough potatoe starch to slighly thicken. Fry in hot oil or skillet sprayed with cooking spray, dropping by tablespoonfuls and flattening into pancakes.Place on paper towels to absorb excess oil. Serve hot. Delicious with applesauce, sour cream, or sprinkled with sugar.
