1 chicken, approximately 3-4 lbs.
11 cups of water
6 leeks, washed, trimmed and cut into 1" slices
1/2 cup rice
1 tbsp. oil
1 lb. pitted prunes
1/2 cup chopped parsley

Directions:
Directions:
Wash the chicken thoroughly and put it in a large saucepan.
Pour in the water and bring to a boil. Add the leeks, rice and
salt. Partially cover the saucepan and simmer gently for 2
hours. Add the prunes and continue to simmer fo another 1/2
hour.

Remove the soup from the heat and lift out the chicken. When
it is cool enough to handle, remove the skin and cut the meat
into thin slies. Return the meat slices to the soup and check to
see if the soup needs additonal seasoing.

Just before serving, sprinkle with parsley.
