Pound Thinly Sliced Pancetta Ham
4 oz. Gorgonzola Cheese
Pound Fresh All Natural Sea Scallops (20-30 count) (tendons removed)

Directions:
Directions:
Preheat oven to 450. Place round slices of pancetta in 9x13 inch baking dish. Center one scallop on top of each slice of pancetta. Top with pea to dime size (1/2 tsp) nugget of Gorgonzola cheese. Wrap lightly and twist the pancetta around the scallop and cheese so it resembles a little purse. Place dish in oven; bake until internal temperature of scallops is 140 about 10 minutes.
