2, 5-oz. cans boned chicken or tuna
1 c. shredded carrots
1 c. diced celery
1 Tbsp. finely chopped onion
1 c. mayonnaise
1 c. shoestring potato chips

Directions:
Directions:
Mix all ingredients except shoestring potatoes together and chill for several hours. Add shoestrings just before serving.

This recipe was one Mom Walker and I both loved. It is deliciously crunchy and a favorite lunchtime treat we enjoyed when spending time together.
