1 1/2 c buttermilk
1 heaping tsp baking powder
1/4 c cooking oil
1 egg
1/4 c sugar
1 tsp baking soda
1/4 tsp salt

Directions:
Directions:
Preheat a skillet over medium heat. In a blender, or with a mixer, combine all of the remaining ingredients until smooth. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles. When the edges appear to harden, flip the pancakes. They sould be light brown. cook on the other side for the same amount of time, until light brown.

Ricky's Favorite --for years Ricky would wake me up early on Sat. mornings so that I would make these pancakes. I finally had enough, and wanted to sleep in so I taught him how to make them. Now he is a pro and makes them for our family every Sat. morning! Spencer is now in training to assist Rick.
