1 C. raw Uncle Ben's 4 1/3 C. whole Milk (combo whole &
Converted Rice 1/2 - 1/2 for creamier pudding)
4 1/2 C. Water 3 T. Butter
1 C. Sugar 2 tsp. Vanilla
1 T. Cornstarch 6 Egg Yolks, beaten well
3/4 tsp. Salt Opt.:Cinnamon to taste and/or 1/2 C. Raisins

Directions:
Directions:
Combine rice, water, couple tablespoons of sugar, in a large saucepan, bring to boil. Reduce heat, cover and simmer approximately 25 minutes or until rice is very tender and most of water is absorbed.
Combine sugar, cornstarch and salt. Add this sugar mixture and milk to rice. Heat to boiling, boil one minute, stirring constantly. Remove from heat stir in butter and vanilla. Slowly stir about 1 cup of the hot rice mixture into the beaten egg yolks in a bowl
then blend this into remaining mixture in the saucepan.
Cook over medium heat, stirring frequently, just until mixture starts to bubble.
Serve warm or chilled, plain or with cinnamon and/or raisins.
