3 c. frozen hash brown potatoes
18 large eggs beaten
2 1/3 c. chopped cooked ham
1 1/4 c. chopped fresh tomato, divided
1 c. chopped green pepper, divided
1/3 c. chopped onion
1 1/2 c. (6oz) shredded cheddar

Directions:
Directions:
Cook potatoes according to directions, drain well. Combine with eggs, ham, 1 cup tomato and 3/4 cup green pepper and onion in a large bowl; stir well. Pour mixture into a lightly greased 13x9 baking dish. Bake, uncovered at 325 for 40 minutes. Top with remaining 1/4 cup tomato and 1/3 cup green pepper. Sprinkle evenly with cheese. Bake an additional 5 minutes or until cheese melts.
