3 lb. chicken cut in 8 pieces, 1 oz butter, 1 T. vegetable oil, 4 oz button mushrooms, 4 oz streaky bacon, derinded and chopped, 1 medium onion chopped or 8 oz. shallots chopped, 1 garlic clove crushed, 1/4 pint red wine, 15 oz. can condensed cream of mushroom soup (undiluted).

Heat the butter and oil in pan and fry chicken joints until golden brown all over. Transfer to oven proof casserole. Fry mushrooms, bacon, onion, and garlic for a few minutes. Stir in wine and soup and bring to boil. Pour over chicken in casserole. Cover tightly and cook. Cook at 325 for 1 1/4 hour.

Luarena served this dish to us when we visited Ballycastle. We all loved it. She said this was a family favourite in N. Ireland. (This dish was also served for the Bastian's Nakoma neighborhood 2007 Tulip Dinner).
