1 1/2 c. GF flour mix
1/2 t. baking powder
3 eggs
1/4 c. sugar
1/2 c. brown sugar
1/4 c. honey
1/3 c. butter - melted and cooled
2 t. vanilla
1/4 c. toasted pine nuts, ground

Directions:
Directions:
Preheat pizzelle iron.
Stir together flour & baking powder, set aside. Beat eggs in mixer bowl on high until thick and lemon colored, about 4 minutes. With mixer on medium, gradually add sugars and honey. Beat in cooled butter and vanilla. Add flour mixture and beat on low speed till combined. Add in nuts.

Place batter on iron and cook until just done, 30-60 seconds.

If batter explodes off the iron. Let batter rest 20 to 30 minutes and try again.

These cook super quick it seemed, but were awesome. I formed them into bowls inside a ramkin for ice cream.
