2 c. flour
1 c. sugar
1 t. baking powder
1 t. baking soda
t. salt
c. margarine
1 c. (3 bananas) mashed
c. buttermilk (or 1 c. regular milk + T. vinegar)
1 t. vanilla
2 eggs

Directions:
Directions:
Combine dry ingredients. In a separate bowl beat wet ingredients. (Let milk and vinegar sit for a couple of minutes to thicken.) Blend everything together using a hand held mixer. Add eggs; beat on medium speed for two minutes. Pour batter into greased and lightly floured cake pan. Bake at 350 for 25-30 minutes.
