1 tbl Veggie Oil
2 tbl Red Pepper (minced)
2 tbl Green Onion (minced)
1/3 c Frozen Corn
1/4 c Black Beans (rinsed and drained)
2 tbl Frozen Spinach (thawed and drained)
2 tbl Jalepeno (diced)
1/2 tsp Parsley (minced)
1/2 tsp Cumin
1/2 tsp Chili Powder
1/4 tsp Salt
1/8 tsp Cayenne Pepper
3/4 c Jack Cheese (shredded)
5 Flour Tortillas

Directions:
Directions:
Rub chicken with oil, salt and pepper and grill. Saute red pepper and onion. Dice chicken and add to skillet. Add corn, beans, spinach, jalepeno, parsley, cumin, chili powder, salt and cayenne pepper. Cook for 4 minutes. Stir well. Remove and add cheese. Stir until cheese has melted. Wrap tortillas in moist cloth and microwave for 1 1/2 min until hot. Spoon mixture in center and fold in the ends and roll very tightly. Pierce with toothpick. Freeze overnight. Deep fry until golden brown.
