1/2 lb Italian Sausage (Ground or out of casing)
1/4 c Olive Oil
1/2 c Yellow Onion (minced)
1 med Red Pepper (sliced)
2 cloves Garlic (minced)
1/4 c Dry White Wine
4 c Whole Tomatoes (canned, pitted, minced & drained)
1/8 tsp Crushed Red Pepper
1/8 tsp Salt
1/8 tsp Pepper
1lb Rigatoni Pasta (cooked)
2 tbl Basil
4 oz Caprino Cheese (goat cheese)

Directions:
Directions:
Cook sausage in chunks in olive oil over medium heat until browned slightly. Add onion and peppers until tender. Add garlic and cook for 1 minute. Add wine and allow to simmer for 3 minutes. Add tomatoes, red pepper, season with salt and pepper. Bring to boil over high stirring constantly. Reduce to low and simmer until thick. Stir in pasta. Serve with Caprino cheese on top.
