For Chicken:
6 lg Chicken Breasts
2 tbl Olive Oil
1/2 tsp salt
1/2 tsp pepper
8 oz Goat Cheese (softened)
For Sauce:
2 tbl Butter
1 tbl Garlic (finely chopped)
1 tbl Yellow Onion (finely chopped)
1/2 c Dry White Wine
1/4 c Lemon Juice (freshly squeezed)
10 tbl Butter (cut into small pieces)
1 1/2 c Sun Dried Tomatoes
1/4 c Basil (chopped)
1/2 tsp Kosher Salt
1/2 tsp White Black Pepper

Directions:
Directions:
For Sauce: Place butter, garlic and onion over medium heat. Saute` until tender. Add white wine and lemon juice. Simmer to half. Reduce heat to low and add cold butter one piece at a time. Add remaining ingredients. Stir to blend. Set aside.
For Chicken: Brush with olive oil. Add salt and pepper and grill for 15-20 mins until done. Divide goat cheese evenly among the chicken. Spoon sauce over chicken and cheese. Serve.
