4 Chicken Breasts (skinless, sliced for a pocket)
2 tbl Olive Oil
1 medium Onion (chopped)
1 medium Granny Smith Apple (coarsely chopped)
1/2 c Cranberries
4 oz Brie Cheese (rind removed)
1/4 tsp Salt
1/4 tsp White Pepper
1/4 tsp Thyme
1/2 c of Apple Cider
1 c Bisquick
1 stick of Land o Lakes Butter (cut into slices)
1/2 c of Parmesan Cheese
1/2 tbl Paprika
1/2 tbl Adobe

Heat oil in medium skillet over medium heat. Add onion, apple, cranberries, thyme, salt, pepper and cider. Cook until tender. Cool slightly and stir in brie. Divide stuffing into 4 equal portions. Stuff each chicken breast with stuffing and seal with toothpicks. Heat oven to 400 and melt 1/2 stick of butter in a 9x13 pan. In a seperate bowl, combine bisquick, Parmesan cheese, Adobe and paprika. Coat chicken with bisquick mix. Place chicken in pan and place remaining butter over chicken. Bake for 30 - 45 minutes until no longer pink.
