6 boned chicken breasts
6 teaspoons butter
6 teaspoons minced onion
1 jar mandarin orange slices - juice reserved
1/2 cup flour
1/2 cup fry bread crumbs
1/2 cup melted butter
2 tablespoons flour
1/2 cup fry white wine


Directions:
Directions:
Tenderize chicken breasts with mallet so they are thin and easy to roll.

Spread chicken breasts out inside up. On each breast put 1 teaspoon butter, 1 teaspoon onion and 3 slices of mandarin orange. Roll up the chicken and secure with toothpicks.

Roll in mixture of flour and bread crumbs. Put in oven safe saute pan and pour melted butter over all.

Bake at 500 degrees for 15 minutes.

Baste chicken with pan juices, reduce heat to 350 degrees and continue cooking about 45 minutes or until done.

Remove meat to platter and keep warm.

Blend in 2 tablespoons flour and then rest of the orange slices, juice and wine in saute pan. Cook on top of the stove in the saute pan stirring until thick.

Pour over meat and serve.
