1 and 1/2 cups unbleached all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
A few shakes of pumpkin pie spice for added flavor
1/2 cup unsalted butter, melted and cooled
1 cup sugar
One 15 ounce can pumpkin puree
1 teaspoon pure vanilla extract

Preheat oven to 375 degrees. Line muffin tins with paper liners or cast with cooking spray.

Combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg in a medium mixing bowl. We also add a bit of pumpkin pie spice just for the fun of it.

Whisk together the cooled melted butter, sugar, eggs, pumpkin puree, and vanilla in a large mixing bowl. With a wooden spoon stir in the flour mixture until just combined

Fill each muffin cup about 3/4 the way full. Bake the muffins until they are golden and a toothpick inserted into the center comes out clear, 22 - 25 minutes. Rotate the muffin tins half way through the baking time from the top rack to the bottom racks so that they bake evenly. Invert them onto a wire rack and then turn them right side up on the rack to cool completely.

Tori loves these muffins and just for her we make the mini muffins! Just use mini muffin tins instead of the regular size tins and cut the baking time in half.
