1 3/4 c granulated sugar
1 1/4 c vegetable oil
2 c flour
1 tsp salt
3 c grated carrots
4 eggs
2 tsp baking soda
2 tsp cinnamon
1 c chopped walnuts

Frosting:
1/3 pkg powdered sugar
1/2 stick softened butter
6 oz cream cheese
1 tsp vanilla

Directions:
Directions:
Cream sugar and eggs well; add oil, carrots, and walnuts. Add dry ingredients which have been sifted together. Bake at 350 in 9 x 13 pan for 45 to 50 min or until cake springs back when touched.
For frosting, mix all ingredients; adjust powdered sugar and/or cream cheese to taste.

This recipe was given to me by my supervisor at my first job after graduating college in 1971. I've used it ever since and get many compliments! I've never changed it for high altitude, but you may want to experiment on your own.
