eggplant, cut in half, pulp removed & cut in small pieces
salt
pepper
romano cheese
eggs
bread crumbs
pasta sauce

Directions:
Directions:
Cook eggplant pulp in olive oil with chopped onion, garlic, pepper and salt. Put in refrigerator overnite. Next day: add romano cheese, eggs, bread crumbs, salt and pepper. Stuff eggplant. Put pasta sauce on top with romano cheese. Bake @ 350 until cooked.
