Herb Roasted Orange Salmon Recipe

2 tablespoons olive oil
1/4 cup fresh orange juice
Finely grated zest of 1 orange
2 tablespoons minced garlic
2 teaspoons dried tarragon
Salt and coarsely ground black pepper, to taste
4 salmon fillets (about 8 ounces each) with skin on
2 teaspoons freshly snipped chives

1. Mix marinade: In a bowl, combine the olive oil, orange juice, orange zest, garlic, tarragon, salt and pepper.
2. Add salmon fillets to marinade and combine well. Marinate for 1 hour at room temperature, tossing once or twice.
3. While fish marinates, preheat oven to 475F.
4. Place the salmon fillets, skin-side down, in an oven proof dish and pour marinade on top. Bake for 7 to 8 minutes or until salmon is just cooked through. (Fish should flake easily when tested with a fork.)
5. Carefully remove to a serving platter and sprinkle each fillet with 1/2 teaspoon chives.
