1 small shoulder or loin roast
1 cup orange juice
juice of 2 lemons
3 T. salt
2T. black pepper
2 T. oregano
6 cloves garlic, minced
1 small onion, sliced

Directions:
Directions:
Marinate pork roast in orange juice and lemon juice 2-3 hours.(overnight is fine too) Season with salt, pepper and oregano. Place in roasting pan and cover with garlic and onion. Cover pan with foil, bake at 300 for 2 hours, 30 minutes or until internal temperature reaches 160. Remove foil and bake at 350 for 15 minutes to brown meat. Remove from oven and let stand 5 to 10 minutes. Cut in 3/4-inch slices.
