Peach Pie Recipe

6 C peeled, sliced peaches (apx 12)
1/2 C sugar
4 t cornstarch
1/8 t salt
1/3 C water
1 T butter
1/4 t almond extract

1 baked 9" pie crust
whipped cream

Directions:
Directions:
In a blender or food processor, blend or process 1 C of the peaches until smooth = apx 1/2 C puree.

In med saucepan, stir together sugar, cornstarch and salt. Add water and puree. Cook and stir till bubbly. Cook and stir 2 minutes more. Stire in butter and almond extract.

Arrange remaining peach slices in baked piecrust. Pour puree mixture evenly over peaches. Cover and chill 4 to 24 hours.

Serve with whipped cream
