1 15 oz can of corn - drained
1 med onion chopped (1/2C)
1/2 C chopped sweet green or poblano pepper
1/2 C chopped red pepper
3 cloves garlic - minced
2 T oil
1 8 oz baby lima beans - drained
3 lg potatoes - cut into 1/2 " cubes
1 4 oz can of diced green chili peppers - drained
3 C water or broth
2 C 1/2 and 1/2 or light cream
1 14oz can of cream style corn
2/3 C sliced baby zucchini or 1 small zucchini chopped

Directions:

Lightly coat a 15 x 10 baking pan with pam spray. Spread the drained corn in pan. Roast uncovered in oven at 450 for 15 min or until corn is browned - stir occasionally.

In 4 Qt dutch oven, cook and stir the onion, peppers and garlic in the hot oil over med-hi heat for 5 min until tender. Stir in beans, potatoes, undrained chili peppers and water. Stir in roasted corn. Simmer, uncovered 15 min, stirring occasionally.

Stir in 1/2 and 1/2, cream style corn and zucchini. Cook and stir for 5 more minutes or until heated throughly. Do not boil.
