1/4 C butter
1 med onion - chopped (1/2C)
8 oz fresh mushrooms - sliced thin
1 med carrot, chopped (1/2C)
1/4 C flour
1/4 t salt
1/4 t pepper
2 C chicken broth
1 12 oz can of evaporated milk
1 C cooked wild rice
1 C chopped chicken - cooked
1/2 of 8 oz pkg cream cheese - cubed

Directions:
Directions:
In 4 qt dutch oven, melt butter over med heat. Add onion, mushrooms and carrot. Cook and stir over med heat until carrot is tender. Stir in flour, salt and pepper. Add broth all at once. Cook and stir until bubbly.

Stir in evaporated milk, wild rice, chicken and cream cheese, cook and stir over med-low heat till cheese is melted and soup is smooth.
