2 C grated zucchini
3 C flour
2 1/2 C sugar
1 C oil
1 t baking soda
1 t baking powder
1 t vanilla
3 eggs
1 C walnuts - chopped

Directions:
Directions:
Mix - oil, eggs, sugar and vanilla

Mix - flour, baking soda, baking powder in separate bowl.

Mix wet and dry together till smooth. Add in zucchini 1 C at a time. Add walnuts.

Pour into greased and floured loaf pans.

Bake at 375 until brown on top (25-35 minutes) OR until toothpick comes out clean from center of loaf.

Cool 10min in pans then remove and finish cooling on wire racks.

You can double foil wrap for freezer if desired.
