Sweet Potato Balls Recipe

4 large sweet potatoes
2/3 C brown sugar
2 T orange juice
1 t orange zest
1/2 t freshly grated nutmeg
2 C shredded coconut, sweetened
1/2 C sugar
1 t cinnamon
1 lg marshmallow per ball

Directions:
Directions:
Bake potatoes until tender, then peel and mash. Stir in the brown sugar, orange juice, zest and nutmeg.

In separate bowl, toss the coconut with the sugar and cinnamon.

Press mashed potato mixture around each marshmallow, creating a 2-3 " coating/ball.

Roll the balls in the coconut mixture.

Bake at 350 for 15-30 minutes. Watch carefully for the last few minutes of cooking, te expanding marshmallows can cause the potato balls to burst if they get too hot.
