2 16 oz. chopped frozen brocolli, thawed and drained.
1 c. mayo
2 eggs
1 can cream of mushroom soup
1 c. shredded cheddar
Topping: 3/4 cup crushed ritz crackers

Directions:
Directions:
Thaw and drain broccoli. Beat together the eggs and mayo. Fold in other ingredients, except topping. Put into a 13x9 pan spray coated pan. Add topping and cook at 350 for 35 minutes. You may add foil to begin cooking the casserole and then later remove to brown. Easy and tasty!
