1 lb. bonless skinless chicken thighs or breasts
1/4 c. flour
1 tsp. dried parsley
1/2 tsp. poultry seasoning
1/8 tsp salt
dash black pepper
1 egg beaten
2 T. milk
30 wheat crackers finely crushed (1 1/2 c.)

Directions:
Directions:
Rinse chicken, pat dry. Cut chicken in 1 inch pieces. In a plastic bag combine flour, parsley, poultry seasoning, salt and pepper, add chicken pieces a few at a time. Shake to coat chicken pieces well. in small bown combine egg and milk. Place cracker crumbs in another plastic bag. Dip flour coated chicken pieces in egg mixture then shake in cracker crumbs. Place chiken in a single layer on a large ungreased cookie sheet. Bake 10 to 12 minutes at 400 degrees or until tender
