1 T flour
1/2 t salt
1 lb beef sirloin, cut into 1/4 " strips
2 T butter
1 3-oz can sliced mushrooms - drained
1/2 C onion - chopped
1 clove garlic - minced
2 T butter
3 T flour
1 T tomato paste
1 1/4 C cold beef stock or 1 can of beef broth
1 C sour cream
2 T dry white wine

Combine the 1 T flour and salt - coat meat

Melt 2 T butter in skillet, add meat and brown quickly on both sides.

Add mushrooms, onion and garlic- cook until crisp-tender - 3 - 5 minutes.

Remove meat and mushrooms from pan. Add 2 T butter to pan drippings. Blend in the 3 T flour. Add tomato past, stir in beef stock and cook until thick and bubbly.

Return meat and mushrooms to skillet. Stir in sour cream and wine. Cook slowly till hot. DO NOT BOIL.

Serve over hot buttered egg noodles.
