6 pieces of boneless chicken breasts
3 T cooking oil
1 t salt
1 c onion - chopped
2 green onion - chopped
16 oz chopped tomatoes
4 oz green chile salsa
1 t sugar
1/2 t salt
1 pint sour cream
1 C grated cheddar cheese
1 C grated monterey jack cheese
12 corn tortillas
1 C black olives sliced

Directions:
Directions:
Cook chicken until tender, cool and shred meat. Saute onion in cooking oil, add tomato, slsa, seasonings and simmer about 15 minutes. Stir sour cream, sugar, jack cheese to remaining sauce until melted.

Assemble the enchiladas:
Soften the tortilla in sauce. Place chicken, onion, olives and tablespoon sauce in the center of the tortilla. Roll, place seam side down, and place into a 13 x 9 baking dish. Repeat for the remaining 11 tortillas. Top with remaining sauce and cheddar cheese.

Bake at 350 until cheese melts and sauce bubbles
