Gingerbread Man Cookies Recipe

1 C butter
1 C dark brown sugar
1/2 C dark molasses
4 C flour
2 1/2 t ground ginger
1 1/2 t ground cinnamon
1/2 t salt
1/2 t baking soda

Icing:
2 1/4 C powdered sugar
2 1/2 T oil
1 1/2 - 1/3 T water
1/4 t vanilla
dash of salt
food coloring if desired

Beat butter and sugar with mixer until light and fluffy. Beat in molasses. Combine remaining ingredients and gradually mix in until blended. Halve dough and flatten into 1" thick rounds. Chill in plastic wrap until firm - 2 hours in refrigerator or 30 min in freezer.

On lightly floured surface roll dough to 1/4 " thickness. Cut with floured cookie cutter and place 1" apart on ungreased cookie sheet.

Chill and re-roll scraps.

Bake at 350 for 10-12 minutes until edges are lightly browned. Cool for 2 min then place on wire rack to cool.

Icing:
Beat powdered sugar, oil, water, vanilla and salt until smooth. Separate small portions into separate bowls if multiple colors are desired. Use toothpicks or decorator bag to apply icing to men.
