Zucchini Bread Recipe

3 eggs, well beaten
2 cups grated zucchini, with peel
1 cup vegetable oil
2 cups sugar
1 Tbsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 Tbsp. cinnamon
1 cup chopped nuts

Mix wet ingredients together. Sift dry ingredients and add to wet. Stir in the nuts. Pour into greased and floured loaf pan. Bake at 325 for 1 hour. Makes 2 bread sized loaves or 3 small sized loaves.
