For the Pastry:
1 c. sifted flour
tsp. salt
1/3 c. chilled vegetable shortening (Crisco)
c. ice water
For the filling:
1 Large Granny Smith Apple
1 T. cornstarch
3 T. sugar
tsp. lemon juice
1/8 tsp. cinnamon
2 pinches nutmeg
Pinch salt
1 T. butter, very cold or frozen, cut into bits

Directions:

Preheat oven to 450 F.
Prepare your pastry as follows:
Place flour in salt in a shallow mixing bowl and cut in shortening with a pastry blender until mixture resembles coarse meal. Sprinkle water over surface, 1 tbsp at a time, and mix in lightly and quickly with a fork, just until pastry hold together. Dampen your rolling surface and lay out a piece of plastic wrap, making it stick to the surface. Shape your dough gently into a ball, separate it into two portions, one larger than the other and put the larger one on your plastic wrap. Put the remaining dough in your bowl into the refrigerator while it waits to be rolled. Place another piece of plastic wrap over your dough on the plastic covered surface and begin rolling out the dough until you are at 1/8 inch thickness or less. Gently peel back the top layer of plastic, lift the plastic with the dough off your surface and fit the dough, dough side down into your pie plate. Once fitted, gently peel away the plastic. Put the pie plate with the dough in the refrigerator while you mix the filling and roll the remaining dough.

For the filling:
Peel, core and thinly slice apples; taste, and sweeten as needed with sugar; add lemon juice, spices and salt and toss gently. Pile apple mixture in pie shell and dot with butter. Brush pastry rim light with cold water, fit top crust over apples, trim, seal and crimp edges. Slit decoratively with a sharp knife to allow for release of steam while baking. Sprinkle very lightly with a little white sugar. Bake 10 minutes at 450 F, then lower temperature to 350 F and bake for 30 minutes. Remove from the oven and allow to cool for 10 minutes before serving.
