2 Lg onion - chopped
3 Cloves garlic - minced
1 t basil
1 t oregano
1 1/2 t paprika
2 t chili powder
1 T sugar
1 Can chopped tomatoes
5-6 T olive oil

Smoked Rashers - 1-2 pkg - chopped into thin slices

Directions:

Saute Rashers until they are medium pink

Add onion, garlic and olive oil

Add tomatoes, sugar, spices and 1/3 C water

Simmer for 45 min without lid

Serve with penne pasta and fresh parmasean cheese
