2 eggs 1 c. milk 2 T. lemon juice 3 c. crushed saltines 2 tsp. finely chopped onion 1/4 tsp. salt 1/4 tsp. pepper 2 lb. fresh salmon
In a bowl, beat eggs; add the next six ingredients and mix well. Add salmon; shape into patties, 3 in each. Place in a greased baking pan. Bake at 350º for 30 -35 minutes or until lightly browned. An optional cooking method is to fry in oil until golden brown.
