Ingredients: 50-75 ladyfingers (the more solid the better) 4-6 c. Espresso 4-8 oz. Sambucco (or Frangelico) 32 oz. Mascarpone cheese 1 c. sugar ¼ c. unsweetened cocoa crème fraiche and mint and espresso beans to garnish

Directions:1.In a large bowl mix the egg yolks with sugar until well blended.
2.Add Mascarpone cheese and 3 oz. of liquor to the egg mixture and mix well.
3.Beat egg whites until soft peaks form. Lightly fold egg white mixture into cheese mixture.
4.Make six cups of fresh, hot espresso and put into a medium bowl.
5.Add remaining liquor to espresso and stir.
6.Dip the lady fingers into the espresso to lightly soak the cookie. Be careful not to soak for a long time otherwise the cookie will collapse.
7.Place wet cookie into a 9x6 baking dish (preferably stainless with a 3-4 inch lip). Line up cookies in bottom of dish to cover entire bottom.
8.Add a layer of cheese mixture to the soaked cookies, and repeat process creating a second layer.
9.Top off second layer with remaining cheese mixture, and dust the top with unsweetened cocoa.
10.Cover and chill in refrigerator for a least 6 hours.
11.Cut into pieces and garnish with mint, crème fraiche and espresso beans. |
