3 eggs beaten,
2 c. sugar,
1/2 c. vegetable oil,
2 tsp. vanilla extract,
2 c. flour,
2 tsp baking soda, 2 tsp cinnamon, 1/4 tsp. salt,
4 c. diced unpeeled apples,
1 c. coarsely chopped walnuts

Cream cheese frosting:
1 8oz pkg. cream cheese, softened,
1/4 c. butter or margarine,
1 1/2 c. confectioners sugar,
1/2 tsp. vanilla extract

In a large bowl beat together eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon and salt. Mix into the batter. Fold in apples and nuts. Spread into a greased 13" x 9" baking pan. Bake 325 for 50-60 min. or until cake tests done. Cool
For the frosting, combine ingredietns in a small mixing bowl until smooth and spread over cake.
